Ingredients (Serves 4)

For the best results you should always use the best quality produce you can find. Supermarket is fine, but head to your local butcher or grocer to source the best, freshest local produce. We always recommend shopping locally and sustainably because in using your PODD Kamado barbecue, what you get out depends on what you put in.

The Meat

To serve 4 plan about 250g of ribs per person up to 350g without sides, so for this recipe we are using 1kg baby back pork ribs.

The Rub

  • 2 tablespoons paprika
  • 1 tablespoon sea salt flakes
  • 1 teaspoon onion granules
  • 1 teaspoon garlic granules
  • 1/2 teaspoon chilli flakes
  • 30g of sugar

The Sauce

50ml orange juice for cooking.

For the sauce you can use any good BBQ sauce / marinade available from the supermarket. Our favourite here at PODD is Sweet Baby Rays.


  • Set up your PODD Kamado bbq for indirect cooking with a target temperature of 110°C, add some hickory, apple or Jack Daniels woodchips to the charcoal to add smokey flavour. TIP: soak the woodchips and pat dry before adding to the lit charcoal for best effect.
  • Mix the ingredients for the rub in the bowl, a simple spoon for mixing should do it.
  • Trim any excess fat off the ribs and lay them out on suitable surface. Cover liberally in the rub on both sides. TIP: start with the bottom of the ribs then flip and cover the top. Leave the ribs rest for 10 minutes.
  • Add the ribs to your PODD and cook for approx 45 minutes.
  • Then lay down 2 large sheets of tinfoil and place the ribs in, curl up the foil and add the orange juice. Pack the ribs fully and put the ribs back on the PODD, cook for a further 1 hour.
  • After 1 hour unwrap the ribs and baste in your favourite BBQ sauce / marinade, place back in the PODD for 15 minutes before adding another layer of sauce. After another 15 minutes remove your ribs, serve with some sides and enjoy!
